But first, what is Tonkara?
Tonkara comes from TON (Pork) + KARA (Karaage) Ginza Bairin’s Tonkara is not the same as any other Karaage (fried chicken) you will find in other Singapore Japanese restaurant. It is made with premium selective pork and not battered with bread crumbs, but instead using Bairin’s way of battering.
SPECIAL COOKING METHOD
A special cooking method called CONFIT is used for Tonkara. First, the meat is roasted for 4 hours and cooked in its own fat. It is then marinated with Ginza Bairin’s mild and sweet original sauce for one wohle day. Finally, it is fried with Ginza Bairin’s 100% cottonseed oil resulting in a crispy yet tender meal!
